Lately there have been a lot of pictures going around with spiralized vegetables. What does that even mean, you ask? Well, you get a spiralizer (I got mine from Amazon for less than $20) and you put your vegetables through and they come out looking like noodles. Don’t they look delicious?
It was my first time making them and to be honest, I`m starting to love them like that. They are fun, beautiful, you can eat them in a salad or sauté with some mango sauce.. mmm.. I might need a quick stop in the kitchen now.
Spiralizing zucchini (or carrot, beets, squash, cucumber) is a great way to eat more vegetables without really noticing them. Add some avocado sauce, cherry tomatoes and voila. Delicious and beautiful lunch is served.

- 1 medium zucchini
- 1 avocado
- ½ lime
- 1 cup cherry tomatoes
- 1 clove garlic
- 1 tbsp chopped onion
- Pinch of salt and pepper
- Pinch of cayenne pepper
- Parsley for decoration
- Use spiralizer to create zucchini noodles
- Blend avocado, lime juice, garlic, onion and seasonings until all creamy
- Place zucchini noodles in a plate, top with avocado dressing
- Slice cherry tomatoes in half, place on top of noodles
- Decorate with fresh parsley
