Raw cakes is what makes my day. Mainly because I have at least a piece every day. Every. Single. Day. (*guilty*)
Healthy eating is about balance and raw food definitely what I love, especially sweet, delicious and preferably in cake form.. Like this one, this one, and this one.
The best part about making raw desserts is that you can make a larger batch in advance, cut it in portion sizes and place back in the freezer and have a slice every day if you wish!

- Crust:
- 1 cup raw almonds
- 1 cup Medjool dates
- ½ cup raw cacao powder
- pinch of Himalayan Sea salt
- Filling:
- 2 cups raw cashews (soaked for 12 hours)
- ½ cup fresh orange juice
- zest from 1 orange
- 2 tbsp melted coconut oil
- pinch of Himalayan Sea salt
- Topping:
- 1 tsbp melted coconut oil
- 1 tbsp raw cacao powder
- zest of orange
- Place all ingredients for crust in food processor and process until it gets chunky and sticky
- Place the crust in a mini cake pan and place in freezer
- In the meantime, place all ingredients for filling in food processor and blend until it gets creamy and smooth
- Pour the filling on top of crust and place back in freezer for 40 minutes
- Mix melted coconut oil with raw cacao in a small bowl
- When the cake is completely frozen, remove it from the cake mold and pour the chocolate mixture over it. Top with fresh orange zest
- Enjoy!
