Raw cakes is what makes my day. Mainly because I have at least a piece every day. Every. Single. Day. (*guilty*)

Healthy eating is about balance and raw food definitely what I love, especially sweet, delicious and preferably in cake form.. Like this one, this one, and this one.

The best part about making raw desserts is that you can make a larger batch in advance, cut it in portion sizes and place back in the freezer and have a slice every day if you wish!

Sweet and tangy orange cake makes a great afternoon pick-me-up over a cup of tea. Enjoy a piece without any guilt, daily if you wish.

Ingredients
  • Crust:
  • 1 cup raw almonds
  • 1 cup Medjool dates
  • ½ cup raw cacao powder
  • pinch of Himalayan Sea salt
  • Filling:
  • 2 cups raw cashews (soaked for 12 hours)
  • ½ cup fresh orange juice
  • zest from 1 orange
  • 2 tbsp melted coconut oil
  • pinch of Himalayan Sea salt
  • Topping:
  • 1 tsbp melted coconut oil
  • 1 tbsp raw cacao powder
  • zest of orange
Instructions
  1. Place all ingredients for crust in food processor and process until it gets chunky and sticky
  2. Place the crust in a mini cake pan and place in freezer
  3. In the meantime, place all ingredients for filling in food processor and blend until it gets creamy and smooth
  4. Pour the filling on top of crust and place back in freezer for 40 minutes
  5. Mix melted coconut oil with raw cacao in a small bowl
  6. When the cake is completely frozen, remove it from the cake mold and pour the chocolate mixture over it. Top with fresh orange zest
  7. Enjoy!
