One day I had some friends coming over for dinner, so of course my to-do list was quite long. Them knowing about my passion for food and cooking, I had to come up with beautiful, delicious and healthy recipes. I was scrolling through Pinterest and saw some gorgeous looking salads. And this is how peachy-avocado- spinach salad was born. Ding Ding!
During cold weather I always feel like having warm, cozy food but my healthy consciousness always reminds me about the fiber, nutrients and all the other benefits raw food has. So having at least one salad was a MUST. Peach season is already over but some stores still have these goodies and I was determined to have them for the LAST time this year.
Peaches are tasty, juicy fruit and a rich source of vitamins, minerals and antioxidants.

- 2 cups of fresh spinach
- 1 fresh peach
- ½ avocado
- ½ cup of blackberries
- 2 tbsp olive oil
- ½ fresh lime
- ½ tsp poppy seeds
- fresh ground pepper
- pinch of Himalayan Sea salt
- Place spinach on a plate
- Top with peach and avocado slices
- Top with blackberries
- In a bowl mix olive oil and lime juice together, pour over salad
- Sprinkle with poppy seeds, salt and pepper
