After celebrating and indulging in hearty delicious food I always look forward to the detox meals after. Don’t get me wrong, I love eating out and indulging but I also love the detox that comes after. Eating lots of healthy, raw and colorful vegetables and fruits give me lots of energy, I feel lighter and easier to concentrate. There are so many benefits in eating clean, natural food that is organic, local and made with healthy ingredients.
This green detox salad is quick and easy and is great as a side dish or you can experiment adding more vegetables, grains or beans to make it a more nutritious meal. In this salad parsley is the main ingredient, together with other herbs. Parley contains a lot of antioxidant properties and is known for controlling cancer, diabetes, and rheumatoid arthritis, along with helping prevent osteoporosis. It also soothes and relieves stomach pain, bloating, nausea and cramps.
There are two types of parsley – flat leaf and curly leaf. I tend to use more of the flat one but for chopped salads I try to mix them up and use as many different herbs as possible to get the best benefits. Variety really is the key and switching up different ingredients is the best way to get multiple nutrients and vitamins in your diet.
So next time you are making some hearty dishes (think BBQ, roasted chicken, burgers), add this as your side dish! It`s light, fresh and super easy to make!

- 1 bunch curly leaf parsley
- 1 bunch flat leaf parsley
- Handful of fresh mint
- 1 tomato
- 1 small cucumber
- 1 lemon
- 2 tbsp apple cider vinegar
- Pinch of cayenne pepper
- Pinch of Himalayan sea salt
- Finely chop all herbs together and massage with your hands until they become soft and juicy
- Squeeze the juice of 1 lemon and add the rest of the ingredients
