Having chia pudding for breakfast has been one of my favorite weekend ritual. It`s great for those quick, easy and simple mornings when you are feeling a bit lazy OR even opposite – BUSY and want to get your day going. The best way to prepare is the night before and let it soak up overnight.
Chia seeds are among the healthiest foods on the planet and are packed with nutrients that are important for human body and brain. Originally, chia plants grow in South America and were imported for Aztecs and Mayans back in the day. In fact, ‘chia’ is the ancient Mayan word for ‘strength’.
Even though chia has been around for thousands of years, it has gained lots of popularity in the last decade. It has been extremely popular between runners and health conscious people for its ability to provide sustainable energy.
Chia seeds are great source of fiber, protein, calcium as well as manganese, magnesium, phosphorus and other vitamins. It is also packed with antioxidants and omega-3s.
I enjoy experimenting with my chia and every time I make a different version of it. Today it has been with chocolate (think antioxidants and energy) and fresh peach (think fiber and vitamin C) and this is definitely one of the best combinations I`ve made so far.

- 2 tbsp chia seeds
- 1 cup non-dairy milk
- 1 tsp raw honey
- ½ tsp raw cacao powder
- pinch of salt
- fresh raspberries
- fresh peach
- homemade granola
- In a bowl mix all ingredients together and stir it well
- Let it sit for 2 minutes and stir again
- After another 5 minutes mix it again
- Let it sit in the fridge for another 30 minutes before mixing OR leave it in the fridge overnight
- In the morning layer chia pudding with fresh peach slices and top with fresh raspberries and homemade granola
